Its bouquet is of great finesse, racy, with subtle fruity aromas (lemon, lemongrass, grapefruit, peach, pear, stewed fruit...) and floral (white flowers, lime blossom, white nettle...) or even anise, cumin, liquorice and fennel seed. In its evolution, Riesling is unique because depending on the soil on which it is planted, it develops mineral aromas (gunflint, flint, "oil"...).
