This fourth wine highlights Chardonnay from Mesnil-sur Oger, a historic terroir of the Côte des Blancs, classified as a Grand Cru. It comes exclusively from the 2015 vintage, and is slowly and meticulously aged on its lees. A selective approach is used, based on the purity of fruit and a balance of flavours, with low dosage.
Disgorged as an extra brut with 3.9 grams per liter, the NV Les Rendez-vous de Billecart-Salmon N°4 Chardonnay Extra Brut from Billecart-Salmon reveals a pure, fresh bouquet with aromas of pear, menthol, spring flowers and lemon oil. Moderately weighted with an elegant, tense entry, it’s crystalline with a delicate core of fruit and a saline, mineral finish. This 100% Chardonnay, vinified and matured in steel tanks, is based on the 2015 vintage.
